The Porto Flip is a frothy classic cocktail that’s great as an after-dinner cocktail. It calls for three ingredients—brandy, port, and egg yolk—and is usually served in a cocktail glass topped with fresh-ground nutmeg.

A Porto Flip recipe first appeared in print in 1862, published in Jerry Thomas’s The Bartender’s Guide: How to Mix Drinks; A Bon Vivant’s Companion. The Porto Flip, when properly made, has a rich, dark brown color similar to a cup of coffee.

What Is a Flip Cocktail?

The Porto Flip is a classic cocktail that belongs in the “flip” family, which includes cocktails that use any combination of raw egg (either egg yolk, egg whites, or a whole egg), heavy cream, or simple syrup to create a creamy, froth-topped concoction. Ingredients

  • ½ ounce brandy
  • 1 ½ ounces port (preferably ruby port)
  • 1 egg yolk
  • Ice cubes
  • Optional: Ground or grated nutmeg, for garnish
  1. Pour brandy, port, egg yolk, and ice into a cocktail shaker.
  2. Shake until chilled.
  3. Strain into a chilled coupe glass. Garnish with nutmeg, if desired. Serve cold.
