Chocolate Croissant: Homemade Chocolate Croissant Recipe

 Croissants have now been out of the oven for about 15 to 20 minutes. So I always let them cool a little bit before I cut them. Before cutting them, I will inspect the outside. I want to make sure we have those beautiful layers. You should definitely see the separation of the layers. The croissant shouldn't be too dense. It shouldn't be too tight, and it shouldn't be too big either. I still have to make sure that the puffing stage is right. When I pick them up, actually I look-- I try to feel the weight. They should feel like super light-- super, super fluffy and light. And then before I cut them, I always use-- serrated knives. So very important. Do not try to cut your croissant while it's warm and do not try to use any other knife. You need a bread knife, a serrated knife, to go and cut through those layers. When you cut it, you should hear this little crunch, this crispy outside. And this is a really beautiful croissant. So what I look for first, I look at this honeycomb. So the honeycomb shouldn't be too dense and should be-- this little air pocket from the inside to the outside. And then I'll always, always smell it. So before I actually taste it, I always smell to see the fermentation. Smells delicious. So the fermentation shouldn't be too acidic. It should have this nice, yeasty flavors, and you should still be able to smell the butter as well. And the last part, which is the best, I always take a bite of it. Delicious. So I always say when you eat a croissant, you cannot hide the evidence. It's like murdering croissants. There's flakes all over. And these beautiful flakes actually are from the egg wash and all the layers we have built, so it's actually pretty good to have those flakes in your hands and all over the table.
