A pizza quesadilla is a fusion dish consisting of traditional pizza toppings (including tomato sauce, mozzarella cheese, and pepperoni) sandwiched between two flour tortillas. This Italian-inspired dish is a twist on a traditional quesadilla, a popular Mexican tortilla dish stuffed with melty cheese and other savory fillings.

Follow these simple tips to craft tasty variations of these easy pizza quesadillas:

  1. 1. Adjust the fillings. Customize these tasty pizzadillas with your favorite pizza toppings. Add raw and roasted veggies like peppers, onions, olives, mushrooms, and spinach. Sprinkle on fresh herbs, like parsley, oregano, and basil. Incorporate additional proteins, like crumbled Italian sausage, turkey pepperoni, prosciutto, and bacon. Instead of using mozzarella cheese, add shredded provolone, grated pecorino romano, or a dollop of ricotta.
  2. 2. Be conservative with the sauce. Adding too much pizza sauce to your quesadillas will result in a soggy final dish. Instead, fill your pizzadilla with less pizza sauce and serve with a ramekin of warm marinara sauce for dipping.
  3. 3. Change up the tortillas. Swap the whole-wheat tortillas for standard flour tortillas, flavored wraps, or gluten-free corn tortillas. Note that using corn tortillas will produce smaller quesadillas.
  4. 4. Store in an airtight container. Leftover quesadillas will keep well in an airtight container in the refrigerator for up to 2 days. Reheat the leftover pepperoni pizza quesadillas in a pan on the stovetop or in the oven.

    Grease a large skillet or griddle with a thin layer of olive oil and warm it over medium-high heat.

    Place one tortilla in the hot pan and top it with a ¼ cup of mozzarella cheese, followed by half of the pizza sauce, Parmesan cheese, and pepperoni slices. Top the pepperoni with another layer of cheese and a sprinkle of Italian seasoning.

    Place a second tortilla on top of the quesadilla filling. Using a spatula, lightly press down on the top tortilla and cook it for 3 minutes. Carefully flip the quesadilla over, and continue cooking until it is crispy and golden brown, another 3 minutes. Transfer the cooked quesadilla to a cutting board or plate, and repeat this process with the remaining ingredients.

    Slice each pepperoni pizza quesadilla into 4–6 wedges and serve immediately with warm pizza sauce for dipping.
